🍝 Spinach & Artichoke Wonderpot

Hi there and thanks for stopping by! Today I have another quick and easy recipe using all pantry staples. This is a wonderful recipe to keep in your arsenal for in between shopping trips and is a crowd-pleaser for sure! It's vegetarian, and can be made vegan and/or gluten-free with a few easy substitutions. 

I've seen a bunch of one-pot pasta dish recipes floating around the internet lately, and I've always been too skeptical to try it. It seems to good to be true, literally combine a bunch of raw ingredients in a pot, throw the lid on, set a timer, and voila, dinner is served! I was inspired by this recipe from Budget Bytes, and put my own spin on it.

I added some white wine, a little cream, and sauteed the onions first to give them some color and sweetness. It makes the whole house smell like an Italian Trattoria, and it's quicker, healthier, easier, and less expensive than ordering takeout, I promise. And best of all? Just one pot to clean up!


Spinach & Artichoke Wonderpot-
Ingredients-
-1 jar artichoke hearts, drained and diced
-1 yellow onion, thinly sliced
-5 cups broth of choice
-1 c white wine of choice
-2 tbsp vegetable oil
-1 lb spaghetti 
-1 tsp dried oregano
-1 tsp garlic powder
-1/4 tsp freshly cracked black pepper
-1 6-oz bag baby spinach, roughly chopped
-1/4 heavy cream
-Parmesan cheese and crushed red pepper, for topping

Method-
1. Saute onion in 1 tbsp oil in pot until tender and caramelized. 
2. Add all other ingredients, except spinach and cream. Break spaghetti in half and make sure all ingredients are pushed down under the liquids. Place lid on the pot and cook on high until liquid reaches a rolling boil. 
3. Immediately stir to make sure the pasta doesn't stick. Lower heat to low, and place lid back on. Let simmer for about 10-15 minutes, until pasta is cooked and most of the liquid has been absorbed. 
4. Add spinach and cream and give it a good stir, allowing spinach to wilt. Serve topped with Parmesan and red pepper flakes. Enjoy!
