⚡ No-Bake Energy Bites

Hi there and thanks for stopping by! Lately these little energy bites have been the perfect pairing for my morning coffee. 


I used this recipe from Gimme Some Oven, and they're the perfect blend of sweet and crunchy. They're packed full of healthy ingredients, and can be enjoyed anytime of day. From what I've read, these are pretty adaptable and the substitutions are endless. You can sub honey for maple syrup, use any type of nut butter, omit the coconut, etc. 

My batch made about 25 small balls, and I keep them in a Tupperware container in the fridge for about a week. It's the perfect snack with no chemicals or preservatives. 

Here's my version of the recipe:

No-Bake Energy Bites-
Ingredients-
-1 c old-fashioned oats
-2/3 c shredded coconut
-1/2 peanut butter
-1/2 c ground flaxseed
-1/2 semi-sweet chocolate chips
-1/3 c honey
-1 tsp vanilla extract

Method-
-Stir all ingredients in large bowl until combined.
-Roll into balls (I used a small ice cream scoop) and place on plate or small baking sheet.
-Freeze for about 20 minutes, to set. 
-Store in a sealed container in fridge for up to 1 week. Enjoy!
