Strawberry Scones


Hello and Happy Monday! I'm back with a super simple scone recipe just in time for strawberry season! I love picking strawberries, it's one of my very favorite summer activities! We go to Phillips Farm in Milford NJ and love picking a variety of fruits there all summer long-strawberries, blueberries, blackberries, peaches, and apples. I love baking with all these fresh fruits when we have an abundance of them!


Ingredients:
2 1/2 c flour
2 tsp baking powder
1/2 tsp salt
4 tbsp sugar
1/2 c butter, chilled and cubed
1 c chopped strawberries
1/2 c milk
Coarse sugar for topping

Method:
-Preheat oven to 400 and line a cookie sheet with parchment paper.
-In a large bowl, combine 1st 4 ingredients.
-Add chilled butter, tossing to coat. Rub mixture between fingertips until it resembles wet sand.
-Add strawberries, then milk and combine into a sticky ball.
-Divide into pieces (15-18 mini ones) and place on cookie sheet
-Top with coarse sugar, if desired.
-Bake 16-18 minutes until slightly brown. 
-Enjoy!
