For my dad's birthday every year his request is always a cheesecake. My husband David is known for making a fabulous one and this year he really delivered, a homemade cheesecake with a trio of fruit toppings-pineapple, blueberry, and cherry. My husband is a skilled baker and it came out phenomenal!
Cheesecake can be made so many different ways but this is the recipe I think of as "traditional". It has a graham cracker crust, cream cheese filling, and is topped with a sour cream mixture. It was delicious-tangy, not too sweet and very light.
Here are the recipes David used:
New York Style Cheesecake
Blueberry Compote
Pineapple Compote-
Ingredients:
1 20oz can crushed pineapple
1/2 c sugar
1 tbsp cornstarch
Method:
1. Add all ingredients to a saucepan and bring to a boil until mixture thickens, approximately 2-3 minutes.
Cherry Compote-
Ingredients:
1 lb cherries (we used frozen)
4 tbsp OJ
2 tbsp sugar
Method:
1. Add all ingredients to a saucepan and cook over medium heat for 5 minutes
2. Remove cherries with a spoon and further cook the liquid until it reduces in half and slightly thickens, approximately 2-3 minutes
3. Add cherries back in and stir to combine
(All of the compotes can be stored in the fridge for up to 2 weeks.)

I've made a few. My favorite is pumpkin cheese cake. It isn't as 'heavy' as either pumpkin pie or cheese cake. Not sure how that is possible, but it always seems 'lighter' than either one. :)
