🥣 Crockpot Italian Sausage "Stoup"

Hi everyone! Did you have a nice Christmas? Do you still have a houseful of guests? In case you do or are just in need of a super quick and easy (as well as inexpensive) meal, I've got a delicious one to share today!


This is a super simple dinner everyone raved about. I threw all the ingredients together in my good ole crock pot in the morning and dinner was done! I saw many versions of this recipe floating around the internet, so I decided to play with the ratios to make more of a thick soup or "stoup". I doubled the spinach and sausage, and halved the tomatoes, cream cheese, and broth. It was delicious with some crusty bread and a cold glass of white wine!

Here's the recipe:

Ingredients:
-2 lbs sweet Italian sausage, casings removed
-10 oz baby spinach
-1 can diced tomatoes
-4 c chicken broth
-1 c white wine
-1 block (8 oz) cream cheese, cut in cubes
-garlic powder, oregano, black pepper, red chili flakes to taste
-1 19 oz bag frozen cheese tortellini

Method:
-Brown and crumble sausage and drain fat.
-Add all ingredients, except tortellini, to crock pot, mix well, season to taste.
-Cook for 4 hours on low
-Add tortellini for last 30 minutes of cooking. (Or cook separately on stove top if everyone is eating at different times-the tortellini will start to absorb the broth otherwise)
-Enjoy!

PS-This is the Riesling we had with dinner, everyone loved it! So refreshing and such a great price!
