👩🏻‍🍳 Maple-Mustard Pork Loin

Hi friends! We recently made a super quick and simple pork dish for dinner one night and it was so easy and fabulous I just had to share!

All you do is pat dry a pork tenderloin (we made 2 of them, 1.5 lbs each) and salt and pepper both sides. In a bowl mix equal parts (about 2 tbsp) Dijon mustard and good maple syrup and pour over the pork. Pop in a 425 oven for a half hour or so until the internal temperature is 145. Allow to rest and slice up and enjoy! The sugar from the glaze caramelizes but the inside of the pork stays so juicy (and it makes the house smell absolutely heavenly!) 

We paired ours with sauteed spinach and some couscous and it was dynamite! Even better, the whole dinner took a half hour to make and isn't expensive at all! It would be fabulous for entertaining too!
