This pasta salad is delicious warm, room temperature, or even straight out of the fridge. Feel free to switch up the veggies for any kind you have laying around or even to add in a protein of your choice, I think shrimp would be a fantastic addition! And if you like a little kick, some red chili flakes would be delicious too! So whip some up and give it a try, it'll have you saying "Opa" in no time! ;-)
Greek Pasta Salad-
Ingredients-
1/2 lb pasta (I used penne)
2 tbsp olive oil
1 small red onion, diced
2 medium zucchini, sliced
2 bags baby spinach
1 can black pitted olives, sliced
6 oz crumbled feta cheese
1 tsp oregano
1 tsp garlic powder
salt and pepper, to taste
Method-
1. Cook pasta according to package. Drain and set aside.
2. In a large pan or stockpot heat olive oil over medium heat. Add in onions, zucchini, and spinach. Saute until tender and onions are translucent.
3. Remove from heat and add in seasonings, olives, and feta.
