🍳 Ham & Corn Quiche Cups


Hi there and thanks for stopping by! I have a quick, easy, tasty, and healthy breakfast recipe for you today. I found a version of this recipe in one of my grocery store's free magazines, and I made it my own. David's co-worker raises chickens and graciously gifted us some fresh laid eggs and I couldn't think of a better way to use them. Let's get cooking!

Ham & Corn Quiche Cups-

Ingredients-
1 cup cooked corn (you can use fresh or frozen)
12 slices of ham, or about 2 cups of chopped ham
1 cup loosely packed baby spinach, chopped
1/2 c shredded cheese of choice (I've tried Colby, white cheddar, and mozzarella and they've all been delicious!)
6 eggs, lightly beaten
Black pepper



Method-
~Preheat oven to 350.
~Grease 12 muffin cups.
~Line each muffin cup with slice of ham, or divide chopped ham among muffin cups.
~Divide spinach, corn, and cheese in muffin cups.
~Pour beaten eggs among muffin tins, top with some fresh cracked black pepper.
~Bake for about 15 minutes, allow to cool in tins for 5 minutes before removing.
~Enjoy!



The mix of savory cheese and eggs with the sweet corn and salty ham is so tasty. Plus, anytime you can sneak in some leafy greens at breakfast you're already rocking your day. ;-) 

These can be made fresh in the morning, or made the night before and refrigerated. Pop in the microwave for about 45 seconds when ready to eat. I love serving these with some fresh fruit salad. And even better, they're nearly guiltless coming in at just 80 calories each!
