πŸͺ Cranberry Walnut Biscotti


Hello there! For some reason I was always intimidated at the thought of making homemade biscotti. It’s such a delicious cookie, not too sweet, and can be enjoyed any time of day. I’m so happy I finally tried it!

David and I whipped up a batch one Saturday morning a little while back, and my whole family had the rest of the weekend to enjoy them. Here’s my recipe:

Cranberry Walnut Biscotti~
Ingredients~
3 1/4 c flour
1 tbsp baking powder
1/2 chopped walnuts
1/2 dried cranberries
3 large eggs
1 tsp vanilla extract
1 c sugar

Method~
-Preheat oven to 375 degrees.
-In a medium bowl combine flour and baking powder, walnuts, and cranberries
-In a large bowl whisk together eggs, vanilla, and sugar.
-Add dry ingredients into wet, to combine, in thirds. (We used a stand mixer, but you could mix by hand)
-Using floured hands, split and flatten dough into 2 rectangles on 2 parchment lined baking sheets.
-Bake for 20-25 minutes, just until lightly golden
-Remove from oven, and when cool enough to touch, slice into strips with a pizza cutter.
-Turn each slice cut side up and put back in oven for about 5-7 minutes until toasted.
-Repeat on the other side.





Whip up a quick batch and enjoy with an espresso (or two). Molto bene!
