🥗 Salade Niçoise

Hi there and thanks for stopping by! Today I’m sharing a wonderful salad recipe. If you’re stuck in a salad rut, this classic French version will spice up your next lunchtime.

Niçoise salad originated from Nice France and traditionally included tuna or anchovies, hard boiled egg, tomatoes, and olives in a vinaigrette. It’s the perfect balance of salty, crunchy, and savory.

Instead of an exact recipe, I thought I’d share what I included in my version. Feel free to add or subtract to suit your taste.


Niçoise Salad~
Ingredients~
Romaine or Boston lettuce, chopped
Seedless cucumber, chopped
Sliced black olives
Cherry tomatoes, halved
1 large red onion, thinly sliced and sautéed
1 large can tuna, drained and flaked
4 small yellow potatoes, boiled, peed, and cut into small chunks
4 hard-boiled eggs, peeled and sliced
Green beans, steamed
Your favorite vinaigrette-we made a version using red wine vinegar and Dijon mustard, found here.

Method~
Using the lettuce as your base, arrange all remaining ingredients on your plates.
Serve alongside the vinaigrette and enjoy!

This is definitely not your weekday, 15 minutes or less kind of salad, but the extra time to mix hot and cold vegetables is so delicious and satisfying! You could even prep mostly everything the night before and store in the fridge overnight for easier assembly. It's also hearty enough for dinner, especially when it's so hot outside. And if tuna isn’t your thing, I think chickpeas would be a wonderful protein substitute. This is classic French cooking at its finest, simple yet elegant. It’ll have you saying “Ohh la la” in no time!
